30g Butter

Parmesan Shavings
Whole Grain Mustard Dressing
Balsamic Glaze
Season striploin and allow meat to warm to room temperature. Heat a frying pan, melt butter, and sear the meat for 90 seconds on each side. Remove from heat and allow to rest. Once cool slice thinly.
Arrange rocket salad on the plate, sprinkle parmesan shavings and mustard dressing. Place the sliced venison on top and dress the plate with balsamic glaze.
